Ingredients Needed

Mix up these gooey marshmallow treats with a few basic ingredients and a box of Fruity Pebbles. I love that something as simple as swapping out the classic Rice Krispie treats can make such a festive difference.  If you prefer the classic flavor, check out my leprechaun hat marshmallow treats. 

Here’s what you need:

6 cups of Fruity Pebbles cereal 1 package Mini Marshmallows (about 10 ounces) ¼ cup unsalted butter 1/3 cup dried cereal marshmallows Gold sprinkles/cake sequins Green sprinkles Pure vanilla extract (optional)

How to Make Them

Whip up a batch of these rainbow Fruity Pebbles marshmallow treats for an after school snack on St. Patrick’s Day or any time you need a little bright spot in your day. Begin with a 9×9 inch baking dish. Grease the pan or line with parchment paper and set aside. If you want a thinner bar, feel free to use a 9×13 pan instead. Melt butter in a large pot over medium heat.  Add mini marshmallows to the melted butter and stir until completely melted. If you want to add a teaspoon of vanilla, go ahead and mix it in here.

In a large mixing bowl, pour melted marshmallow mixture over cereal & mix until well coated. I like to use a buttered spatula or spray my hands with a little non-stick spray to make this process easier. Press cereal mixture into prepared pan in an even layer, again using coated hands or wax paper to keep it from sticking.   Top your cereal bars with dried cereal marshmallows and some green and gold sprinkles. Press lightly so they stick to the melted marshmallows. Cover with plastic wrap and allow to cool completely before slicing. Cut into 6 equal pieces and serve immediately or store at room temperature in an airtight container until ready to eat. You could even throw one in their lunchbox with one of my St. Patrick’s Day jokes and make your little leprechauns smile all day.  

Variations

Cereal treats are such a classic no bake dessert recipe. Whether you make traditional Rice Krispies treats, add Oreos to the mixture or use Cocoa Krispies for a chocolate version, you can’t go wrong. You can even make them with DunkAroos Cereal! These Fruity Pebbles bars are another great way to enjoy this easy snack.
