Ingredients Needed
Pecans – Finely ground pecans are what you will use for this truffle. Graham Cracker Crumbs – You can buy pre-made crumbs or crush your own graham crackers. Butter – Make sure to use real butter not margarine. Brown Sugar – Light brown sugar or dark brown sugar works. This recipe uses light since there is molasses as well. Molasses – This is going to give you that gooey pecan pie texture. Cinnamon – Warm spice to help bring all the flavors together and allows the pecans to stand out. Pure Vanilla Extract – This will help blend all the flavors and sweeten the truffles a bit. Almond Bark – Both white chocolate and milk chocolate are used for these truffles. You can also use your favorite melting chocolate if you prefer.

Step 1: In a large bowl add the ground pecans and graham cracker crumbs. Toss to mix the ingredients. Step 2: Next, use a medium saucepan on medium heat. Add in the butter, brown sugar, molasses, cinnamon, and vanilla. If you plan to add bourbon, be sure to reduce the amount of molasses in this step. Details are in the recipe card below. Step 3: Cook for about 5 minutes or until the sugar is fully melted in the pan, stirring frequently. Step 4: Remove the pan from the stove and pour in the pecan mixture.
Use a spoon to mix to combine. If you plan to add bourbon to your truffles, go ahead and pour it in now. Step 5: Once the truffle mixture is combined. Form mixture into balls with a cookie scoop. Step 6: Place truffles on a parchment paper lined cookie sheet and freeze for 2 hours to help them set. Step 7: Next, melt the chocolate in the microwave as directed on the package. How to Store
