Pound Cake is the Perfect Easy Summer Dessert
There’s just something about berries in the summer, and when you add them to a few sweet ingredients found in the freezer, the results are delicious without ever needing the oven! No one wants to be stuck in a hot kitchen when there is fun to be had. What I love about this dessert is how quick and easy it is to make. It takes longer to go to the store for ingredients than it does to make! I use the term “make,” of course, as this easy pound cake recipe is as simple as mixing together instant pudding and milk, adding whipped topping, and assembling. It’s great for last-minute parties or work events when you forgot to make a side to bring along.
How to Make it
Mix the instant pudding with milk. Then stir in one cup of the Cool Whip. As the pudding sets, slice your pound cake and some berries (I used strawberries and blueberries this time). You can use fresh or frozen berries. I always try to use fresh berries whenever possible. This makes a great Memorial Day or July 4th dessert if you use the berries to make a flag decoration. Delicious and so festive.
Do you need a pound cake pan? Add a quick crumb coat with the rest of the filling once you layer the pudding mixture, cake, and fruit. Then frost with the remaining whipped topping for a crisp, white finish. Top with berries in any design you choose, and enjoy!
