1 ½ cup fresh pineapple, diced from a whole pineapple (reserve outside for serving bowl) 1 tbsp jalapeno, diced 1 cup roma tomatoes, diced ¼ cup green bell pepper, diced ¼ cup yellow pepper, diced ¼ cup orange or red bell pepper, diced ¼ cup red onion, diced ⅓ cup cilantro, finely chopped 4 tbsp fresh lime juice ¼ tsp black pepper ⅛ tsp salt or more to taste

How to make a Pineapple Bowl

To prepare the pineapple bowl, lay the pineapple on its side and carefully cut it in half using a large knife. This will create two equal sized bowls. If you would rather have one deeper bowl, cut about ⅓ of the pineapple off, leaving the entire stem attached and you will have one large bowl.   Then, using a smaller knife, make a cut around the outer edge of the pineapple and then slice across the middle and from top to bottom. Use a spoon to remove pineapple chunks. The core, which will be the harder section to cut in the center of the pineapple, can be discarded once it is removed. 

Making Jalapeño Pineapple Salsa

After you wash your vegetables, it’s time to chop. First, carefully dice peppers and onions.

In a medium bowl, add the peppers and onions to the pineapple chunks and mix until well combined. Repeat with tomatoes and cilantro and stir to incorporate. Dice your jalapeño pepper and add with the lime juice. Season with salt and pepper to taste. Feel free to add more jalapeño pepper for an extra kick.
